Publix is helping couples make dream wedding cakes after failing to get one due to COVID-19

They love Publix cakes, but travel restrictions meant many wedding guests couldn’t travel from Florida to Minnesota, and since there were no Publix stores up north, they figured they would have to settle for a cake from elsewhere.
But when Publix found out, they had an idea.
The dress, decor, and flowers are all important factors, but cake was high on the list for Ben and Erin Cohen.
“When Ben and I first got engaged, it was a no-brainer that we would have a Publix cake at our wedding,” said Erin.
Erin, a native of Florian, grew up with Publix cakes, so she needed one for her wedding day. But due to COVID-19, her parents couldn’t bring the cake to their Minneapolis wedding.
“We immediately thought about how we could reverse engineer a Publix cake,” said Erin.
They tried and tried, but it wasn’t the same. The buttercream just wasn’t right. Erin told her story to a friend and it landed in the paper.
“When Publix read this story and learned what we were trying to do, they reached out and offered to make Erin’s dream come true, and we took the chance,” said Ben.

Not all heroes wear capes – some wear aprons. The store sent the couple everything they needed to make the perfect Publix cake, and the head baker helped them out on a live video call.
“It was really amazing,” said Erin. “It was the Friday before our Sunday wedding and it really started the wedding weekend.”
“It really raised something to what became a backyard wedding, and it just turned out to be a whole different celebration. It was really special, ”said Ben.

It’s safe to say that we know what cake they’ll be eating for each and every anniversary.
“For us, we get our wedding cake every time we’re in Florida. We just go to Publix and get a piece of cake, ”said Ben.
Publix also sent Erin’s parents a replica wedding cake to their Coral Springs home. Although they couldn’t be together physically, they could share the moment and a piece of cake via Zoom.
